Chocolate Mousse Cake

Well, life has been exhausting and busy for the past week. Working has lost its magic and right now, a job is JUST a job. Also learnt the value of money and shall resolve to not spend money like water from this day. I now know how to make most of the drinks in Starbucks (some, anyways) and have been posted as cashier four times. It is one hell of a job because you cant afford to make mistakes.




I baked a Chocolate Mousse cake last Wednesday. I love mousses and have always been meaning to make a mousse cake but my first attempt months back went awry because someone thought she could get away with not putting gelatin in the mousse *shifty eyes*. But hold your horses, this IS a chocolate mousse cake and I DID make it without any gelatin in the mousse! Having said that, this cake does require a lot of eggs. But it was all worth it in the end. 

The dark brown part is chocolate mousse while the lighter brown is chocolate sponge. I highly recommend the cake part because I am not very good with sponges and yet, this one turned out pretty awesome. The whole cake was light, spongy and fluffy. Nothing got overbaked or underbaked. Perfect-o! The mousse on the other hand, can be smoother and silkier. Perhaps I shall try a better brand of whipped cream the next time?



Chocolate Mousse Cake

A:
25g cocoa powder
75ml milk/water (Milk ran out, so I used water)
100g egg yolk
75 ml oil
90g high ratio flour (Substituted with sifted flour)
1/2 tsp baking powder

B:
120g egg whites
1/4 tsp cream of tartar (Omitted this altogether)
110g caster sugar

Chocolate mousse:
1 egg + 140g egg yolks (Put less yolk, more whites)
160g caster sugar, 40ml water (Sugar may be reduced to 130g)
500g dark chocolate, melted
600ml whipping cream

Chocolate coating:
100ml whipping cream
100ml water
160g caster sugar
100g piping jelly
45g cocoa powder
2 tsp gelatine (dissolved in 20ml water)

1. Preheat oven at 180C. Line a 9'' round cake tin with parchment paper.
2. To make cake batter, whisk together A until well-combined. Set aside.
3. In a separate bowl, whisk B until stiff peak. Combine A with B and pour into cake tin. Bake for 30 minutes. Allow cake to cool before cutting into two.
4. To prepare the mousse, whisk eggs until thick and glossy. At the same time, boil sugar and water until sugar is dissolved. Pour hot syrup into eggs in a steady stream while eggs are beaten. Set aside.
5. In another bowl, whisk cream until stiff peak. Fold 1/4 of cream into melted chocolate and fold back chocolate into remaining cream. Fold in egg mixture.
6. To prepare the chocolate coating, boil cream, water and sugar. Add in piping jelly. Stir in cocoa powder. Strain mixture. Add in gelatine mixture. Cool until slightly thickened before pouring over cake.
7. To assemble the cake, place first half of cake onto a into a 9'' loose-base tin. (I did not have one so I just put in on a cake pan and blocked the edge with parchment paper.) Spread 1/2 of the moussse. Repeat with second layer of cake and mousse. Chill. Spread chocolate coating. Chill before serving.


*note: If you happen to not have piping jelly (like me), you may make it yourself.

Piping jelly:
1/4 cup lemon juice
1 tablespoon corn flour
1/4 cup water
4 tablespoons caster sugar

Mix liquids and flour together. Boil. Add in sugar. The liquid will become jelly-like and translucent.

Rainbow Cake

A very very colourful post ahead! Well, yesterday was my first ever break since I got back from China and started work. To be honest, I have been tempted to bake all sorts of things in the past few months but never really had the time to sit down and research my stuff. Did two batches of macarons but it was a failure much. Will need to bake them again, until I succeed or my previously-acquired-macaron-baking-skill would go down the drain. Yesterday I did something just as colourful as macarons but.. in cake form - Rainbow cake! Got the recipe from Sweetapolita but made some slight alterations to the recipe. 

On another note, working does.. sometimes make me feel like a sore thumb. Not sure if it is because I am new to the working field or whether I really do have the IQ of a bird.. I seem to have a lot to learn. Keep making mistakes here and there. And working at Starbucks is a lot of pressure because customers expect a lot from us. Hopefully I will learn more quickly before everyone around me loses their patience with me. For now, they still can explain to customers that I am still new. But it will soon be one week. Then it will be two. Then what's next?

My paint/batter/painted batter. 

Basic Rainbow Cake

226g butter
2 cups sugar
5 egg whites
2 teaspoons vanilla
3 cups flour
4 tsp baking powder
1/2 tsp salt
1 1/2 cup milk, room temperature
Red, yellow, blue gel food coloring

1. Preheat oven to 170C. Line the 9'' cake pans. 
2. Sift together flour, baking powder and salt. Set aside.
3. Cream butter and sugar until white and fluffy. Then add the egg whites bit by bit. Add vanilla. Then, add milk and flour mixture alternating. 
4. Divide the batter into 6 bowls. I used a ladle to uniform the amount scooped into each bowl.  
5. Mix in the food colouring into the bowls. To achieve orange, mix red and yellow food colouring in equal proportions. Likewise to achieve green colouring, use blue and yellow food colouring and to get violet, use blue and red food colouring. Ensure that colouring is mixed thoroughly into the batter. Any clumps will look awful when the cake is baked, so dont let this happen!
6. Pour into the pans and bake for 15 minutes each. 
7. When they are done, let them cool. Refrigerate them before stacking.   

Basic Buttercream (for filling)
1 cup butter
3/4 cup icing sugar
1 teaspoon vanilla

Cream butter until white and fluffy. Add in icing sugar and continue beating. Add in vanilla. 

Whipped Cream (for frosting)
2 cups whipped cream
2 teaspoon icing sugar
1 tsp vanilla

Ensure bowl and beater is chilled before beating. Beating until whipped cream is thick and fluffy.

Assemble
Place cake layer one by one alternating with buttercream filling. Crumbcoat the cake before decorating with whipped cream.

Starbucks Working Experience

Finally 21 and all, I found the guts to stand up against my parents and told them I would find a job. Not that my parents would forbid me to get a job.. but you can sense the disapproval when you start telling them your options etc. But this time round, I was pleasantly surprised to find that they were quite supportive. And indirectly, it meant that I had their blessings to work part-time. Like finally, right?

I went to a lot of places. All were either some form of restaurant, cafe, or bakery. I soon learnt that nobody wanted to hire someone that would only be around for two months or maybe even less. It was really sad for me. TGIF was the first restaurant to hire me. And they offered good pay too. RM1500 - RM1600 a month.. but it was a little difficult to accept working late nights every other day. TGIF is, after all the type of restaurant that opens late and closes later. McDonalds offered a vacancy the next day. The pay was peanuts in comparison to TGIF and after some consideration, I stuck to TGIF. But on the day of my TGIF orientation, Starbucks rang me up and asked if i could turn up for an interview. Starbucks was one of my main targets when applying for a job. Naturally, I said alright i will be there. The interview turned out fine. The interviewer, who eventually became my boss, was very pleasant and down-to-earth. And I did not feel a need to pretend to be something I am not in front of her. At the end of the interview, I was told to turn up for  orientation the next day. 

Day 1 (3pm -  8pm)
Orientation a.k.a Starbuck's First Impression is for all new baristas. Another girl and I were hired and I chatted a little with her as both of us had turned up early. She is a medical student from IMU, same age as me! Seemed pleasant enough a person. :) Manager taught us how to taste and test coffee. Me, the-never-drinks-coffee-ever-person had to down one cup of espresso maynn..... Did a lot of signing and filling up forms that day. Was given two black polo shirts, one apron and one cap. 

Day 2 (10am - 4pm)
Training at Berjaya Times Square. More like a one-day workshop on customer service. The facilitator was pretty friendly and charismatic. Talk was on how Starbucks came about, their mission and stuff. Kinda introduced the values that Starbucks holds closest to the company. Quality - is really important. Got another round of coffee tasting-and-testing. This time we were made to compare Starbucks Arabica coffee beans with some random coffee brand. Not saying this because I am now working for Starbucks but seriously, the random coffee brand tasted like detergent water. Almost wanted to spit it out the moment the flavour hit my tongue. 

Day 3 (8.30am - 2.30pm) - TODAY!
Finally, first day of work. Learnt alot of things today. From changing the bar mat to making lattes and cappuccinos and whatnot. Working environment is very pleasant. My colleagues are friendly and happy people. and even when it was 2.50pm, I was pretty reluctant to go home. so I hung around studying the coffee recipes until 4pm. I have a lot to learn and I do feel the heat and stress (the expectations!) of working life.. but at the moment, it is still manageable. Can't wait till tomorrow!

Guangzhou, China (2 - 8 July 2012)

This will be the fourth and final entry of my trip to China. The days after we got back from Shenzhen, we went to a number of places too. Such as the Yuexiu Park, Western Han Nanyue King Musuem, rode a river cruise along Zhujiang River, and many others. Also had the opportunity to visit the courts and the Intellectual Property Department. But it is the last two days that especially left an impact in my memory.

We also got the opportunity to take a river cruise along Zhujiang River. If you notice, that is the cantan tower and bridge in the background plus the full moon. It was a beautiful night. 


Had expensive but very tasty dessert OUTSIDE the shop. We girls were pigging ourselves  despite the attention it caused us! But oh well. Where else better should we do outrageous, embarrassing things if not in a foreign land?

Shenzhen, China (1 July 2012)

My buddy agreed to take us to Shenzhen and he even brought one of his friends who is working in Shenzhen to take us around. We took the bus there and it was a few hours journey. Pei Ling initially planned for us to go to the theme park in Shenzhen but the majority of us felt that it was more important that we saw the city itself rather than spend the day in a theme park. Feng Cai and his friend took us to the Shenzhen University and a coastal park in Shenzhen. Then we went to the Coastal City Mall. It reminded me very much of our Pavilion (so high class and expensive – I did not have the mood to shop). And since there was an ice-skating rink, I suggested to ice-skate. Feng Cai, his friend, Michelle, Mei Kheng and I went ice-skating while the other three went shopping. I had never had a better experience of ice-skating in my life!

Didnt take much picture in the ice-rink. But did managed to take some pictures at Shenzhen University and the park. Coincidentally, they were having a convocation at the university on that day. 








We spent the day in the Coastal City mall and had dinner before returning to Guangzhou.

Zhaoqing, China (29 - 30 June 2012)

29th June 2012
Chuanlin was very kind to take us to Zhaoqing which is actually a few hours train ride from SCUT. The scenery in Zhaoqing is breathtaking. There we were, seven idiots with our backpacks strolling in a park in Zhaoqing! But we did not really have a choice; checking in to the rooms before visiting the park would take time and if we did that, we might not have been allowed entry to the park. But there were no regrets. We hiked up a hill and there was such a beautiful sight to behold. The entire park was like a scenery landscape. With bridges, hills, lakes, trees, and everything beautiful and natural.






30th June 2012
We resumed our adventure in Zhaoqing. Went to some place that seemed like a forest reserve to me. But it was raining most of the day, unfortunately. There was one point when we were hiking through the jungle when it started pouring so heavily and refused to stop. We were not able to enjoy the waterfall as we had initially hoped. But my friends were able to grab a few snapshots of the waterfall. The colour of the water was emerald green and I felt in awe watching the water gushing from the top. But we were racing with time (Chuanlin had to return to Guangzhou before 5pm).

Guangzhou, China (20-28 June 2012)

So backtracking to the last day of my exams – 18th June 2012; we finished Land law test and it was a few hours away from boarding the plane to Guangzhou, China. We arrived around 12 something in the night and it seemed like forever before we finally reached our hostel in South China University of Technology. It was 3am when we finally settled down and started unpacking our stuff in our rooms. Although there was no sense of homesickness on my part, there were some things I could not adjust immediately to like how we used a wooden plank instead of a mattress for our bed, or how the food tasted so similar and yet couldn’t quite put a finger on how it was different, or even the number of Chinese people walking around everywhere. On the surface, I looked just like anyone of them. But it was only when I opened my mouth, did people realize that I am an alien in this land.

20th June 2012

The programme started off at 2pm with the introduction of the buddies. Each of us are allocated a ‘buddy’ who will be directly in charge of our welfare throughout the trip. Later did I realize that every buddy is different – some can be extremely good, while others just abandoned their buddies for almost the entire trip.
How I got to know my buddy was a funny coincidence. Michelle, Pei Ling and I were sitting together and being Michelle, she started chatting up with the people around her while I was asking Pei Ling to translate the itinerary for me. We were all given a list of our names along with our buddies and I could only read that my buddy’s name was “风采”. Suddenly, Michelle got all excited and told me my buddy was the guy sitting behind me.

Feng Cai. On the surface, he seemed like a typical guy. But the first thing he did was offer his hand to shake. I found that quite formal because I didn’t see anyone else doing that. But anyways, things became to warm up after that. The next session was for our buddies to show us around the campus. Feng Cai took me around the faculty of intellectual property (his faculty), and then later brought me to the main library. His choice of tour actually revealed quite a bit about him. But nvm that. After the library, he tried to settle my SIM card problem before taking me along to meet his friends. It was indeed an experience. I wonder what his friends think of a Chinese girl not being able to speak Chinese.    




We had the welcoming dinner after that. Food was fair but was a little disappointed that our buddies were not allowed to join us. After the dinner, we had our own session of ‘sao kao’ (a.k.a. barbecue).



21st June 2012

First breakfast: Pau and some fried bread. 

The day started off with an academic talk on Human Rights. I was not very involved with the academic and intellectual side of things here, unfortunately, due to my inability to understand. And most of my friends would often find me dozing off during lectures or cross-stitching. This isn’t something I am proud to admit, in fact, I wish I had a stronger command of my mandarin because it limited me in many ways throughout the trip. After lunch, there was a session to introduce all the law societies in the two respective schools. And guess who represented ALSA? ME. Of all people. I intended on presenting my slides in a mixture of Mandarin and English but somewhere along the lines, the facilitator told me I can just present the entire thing in English. How embarrassing! But I managed to pull through, despite the fits of laughter I garnered from people due to my awkward behavior.  

That night, we went to Pei Kang. A popular hang-out spot in SCUT campus. They have their own mall and pasar malam. And the selection is in no way limited. I had ma-la noodles for dinner. And found it surprisingly tastier than the ones I have had in Malaysia. It did not taste as choking and “up-your-nose” and yet, was still spicy.


22nd June 2012


















The awaited morning tea - dim sum. And it did not let down either. The place was crowded and everyone
was scrambling for the dish that they wanted. I enjoyed their egg tarts and radish cake very much. After the dim sum session, we proceeded to the Guangdong Science Centre. It reminded me very much of our own Petrosains. Very big and there was a lot to see. But somehow was not very much in the mood as most of the stuff were kiddie entertainment.


























After lunch, we went to the Guangzhou University Commercial Center better known as 广大. This is a shopping haven as there are lots and lots of clothes to buy. And this was also the first time my buddy along with Chuanlin (Hong Mei’s buddy) accompanied us. I ‘warned’ my buddy we were going shopping (guys never like to accompany girls shopping, it is a universal fact). But he and Chuanlin still came along. Although most of the time was occupied with us girls shopping, the two of them hardly showed their boredom. One of us would occasionally say something and it would somehow make everyone laugh.

There was also an incident where Michelle and I got cut-off from the group (too enthusiastic about finding stuff to buy). When we somehow reunited with the group, Chuanlin simply came over to ask me if I had my phone. It didn’t occur to me that my disappearance had made my buddy look up and down for me and when I later checked my phone, there were several missed calls. And yet, when he finally came to speak to me, he never mentioned anything. Only asked me what I bought. I came to know about it through my friends. I began to see my buddy in a different light after that.

23rd June 2012
We went to Whampoa Military Academy in the morning. And also went to the Sun Yat Sen Memorial. My legs had already been attacked by China mosquitoes by then, but the trip to Whampoa military Academy made it worse. More mosquito attacks!

The people in the military had beds made of wooden boards too! oh that  felt better for us! lol

I still remember that it was raining in the morning that day. The trip to 陈家祠 was postponed and there was a possibility that we had to skip 沙面. But thankfully the rain subsided and the plans of that day went on as planned, although a little later. 陈家祠 had a lot of arts and crafts. My buddy took me around the place and explained to me stuff when I was not able to read it for myself. Later we went to 沙面 with Chuanlin and my friends. It turned out that my buddy and Chuanlin were roommates. So it made us a very close group. Had lots of fun posing for pictures and visiting the various buildings in 沙面. After that, we proceeded to 上下九路 also known as Shang Xia Jiu Pedestrian Street. It is a busier and more crowded version of our Petaling Street. Chuanlin and the rest seemed to be going quite fast and I could not due to my feet which were aching. I was grateful for my buddy who was always there to slow down to accompany me or to check if I was still following the group ever so often. We had our dinner at this restaurant along Shang Xia Jiu. According to Chuanlin, it is one of the most popular restaurants in that place. But to us, we found the food alright only and the service was poor. But what was memorable about the dinner was something else that I will keep in my heart.

25th June 2012
A free day for us after class. Went cycling. My first ever experience of cycling a two-seater bicycle. Do not be fooled! A two seater is so much harder to cycle. I don’t know why but it is. Needed to get the hang of things before I started cycling it. Cycled to Pei Kang where all of us bough shoes for our poor abused feet as well as had take-away for dinner.

26th - 28th June 2012
The next few days were a blur. Pei Ling planned almost all of the activities and we followed. I do recall going to this place and that. But I am not able to remember the names, especially because they were in Mandarin. We would normally have classes from 9am to 11am each day and then we would rush of to proceed with our plans for the day. I remember going to a small village using a ferry. It started raining heavily and we were actually there to hunt for dumplings! Pei Ling eventually entered a clinic and asked the doctor for directions to the dumpling place. Another joke that kept us laughing for days! The doctor was in his coat and even had a mask covering his face when he came out to answer Pei Ling’s queries.

On  the 27th, we had group presentations – all on issues of family law. And on the 28th, there was a badminton competition.
